Soublakia(Meat on Skewers)


  • 1 kg (2lb) of Leg of lamb cut into cubes
  • 8 Bacon rashers cut into large pieces
  • 2 small onnions quartered
  • 1 green capsicum cut into squares
  • Salt and Pepper
  • Oregano
  • Olive oil
  • lemon juice>
  • 8 Long metal skewers
  • Garnish 1 lemon, cut into wedges


    Combine all ingredients in a large ball, cover and leave to stand in refrigerator for several hours to marinate. Skewer meat alternative with bacon onnion and capsicum. Place skewers on grilling tray, close together, then pour over the meat the sause in which it has marinated. Grill turning very freequently. Serve with lemon wedges.
