Beer Batter Onion Rings

2 large onions ------------------------------------- 2 cups milk

2 cups cornmeal ---------------------------------- 1 cup flour

1 tsp. salt ----------------------------------------- 1 can beer (Miller Lite of course)

1 cup buttermilk

Peel and slice onions into medium slices. Separate and soak in milk. I large bowl mix cornmeal, flour and salt. Add beer and buttermilk mix till smooth. Remove rings from milk and dip into batter, coat well. Drop individual rings into deep fryer. When golden brown remove and drain on paper towel.

Onion Roasted Potatoes

1 package of instant onion soup

2 pounds potatoes - cut into large wedges

1/3 cup olive oil or vegetable oil

In a large plastic zipper bag combine the potatoes and soup mix, shake till all covered evenly. Place in a large casserole dish ( 9 by 11) add oil and bake at 450 for 40 mins. Stir occasionally.

Cheddar Cheese Potatoes

7 to 10 medium size potatoes ------------------------------------ 1 can cheddar cheese soup

1 1/2 cups cheddar cheese ---------------------------------------1 1/2 cup milk

Salt and pepper to taste

Peal and slice potatoes (aprox 1/8 inch thick) and soak in cold water with a pinch of salt. Mix soup and milk till smooth, In a large baking dish layer potatoes with soup mix, cheese, salt and pepper between each layer, top with loose cheese and bake covered at 325 for 1 hour and uncovered for 1 hour.

Barbecue Grill Home Fries

6 medium size potatoes ( cut into small squares) ----------------------------- 1/2 stick butter

1/2 teaspoon garlic powder ------------------------------------------------- 1 medium onion chopped

salt and pepper to taste ----------------------------------------------------- Tin foil

Lay out a sheet of tin foil, mix potatoes, garlic powder, onion, salt and pepper cut butter into equal slices and arrange over top. Roll edges of foil tight and pale another layer of foil over package. Cook on grill 20 mins on each side.

Hash Brown Casserole - No kidding this one is a must have --- Yummy !!!!!!!

2 pounds frozen hash brown - slightly thawed --------------------------------- 1 cup sour cream

1 can cream of chicken soup -------------------------------------------------- 1/4 cup chopped onion

8 oz shredded cheddar cheese ------------------------------------------------ 1/4 cup melted shortening

salt and pepper to taste

Mix all and place in a 9 by 12 greased pan and bake for 1 1/4 hour at 350.

Can add a corn flake crust before baking.

Lemon - Glazed Carrots - My Kids really like this one

2 pounds carrots - pealed and cut into 1/2 inch slices -------------------- 3 tbls butter or margarine

4 tbls brown sugar -------------------------------------------------------3 tbls lemon juice

1/4 tsp salt

In a medium size pan cover carrots with water, bring to a rapid boil; reduce heat. Cover and simmer for 10 to 12 minutes, just till the carrots are tender. While the carrots are simmering in a small pan add brown sugar, lemon juice and salt; bring to a boil for 2 mins stirring constantly. Drain carrots and pour butter mixture over and toss to coat.
