Mexican Casserole

  • Cook beef, garlic, onion - add chilies, sauce and olives.
  • Crush chips and pat in buttered casserole, add 1/2 meat mixture, cover with 1/2 sour cream, cottage cheese and grated cheese - repeat layers.
  • Bake uncovered 30 minutes at 350. Garnish with chips.

Aussie Meat Pie

[30 minutes preparation, 2 hours cooking, 4 - 6 adult servings]
  • 2 Pounds Round Steak
  • 2 Tablespoons Tomato Paste
  • 1/4 Cup Flour
  • 1 Tablespoon Worcestershire Sauce
  • Salt & Pepper
  • 12 Ounce Frozen Puff Pastry, Thawed
  • 1 Medium Onion
  • 1 Egg, Lightly Beaten for Glazing
  • 1 Cup Beef Stock
  • 2 Tablespoons Oil

  • Trim any excess fat from the meat and cut into 1 inch cubes. Add salt & pepper to the flour and place in a plastic bag, shake well to mix. Add the cubed meat to the bag and toss gently until well coated with the flour. Remove meat from the bag and shake off any excess flour.
  • Heat oil in a heavy based pan and add the meat in batches, cook quickly till brown. Drain on paper towels. Add the onion to the pan and cook for 5 minutes or until soft.
  • Return the meat to the pan then add the stock, paste and sauce, bring to a boil. Reduce heat and simmer, covered, for about 1 1/2 hours, stirring occasionally. Remove pan from heat and cool completely.
  • Pre-heat oven to 400 F. Transfer meat mixture to a 4-cup capacity pie dish. Roll out the pastry until it's about 1/8 inch thick. Cut long strips of pastry to fit the lip of the dish. Press these strips into place on the dish and seal any joins well. Place the remaining pastry over the pie and press to seal onto the pastry strips. Trim the edges and decorate with left over pastry. Brush with egg and bake for 30 minutes or until golden brown.
  • Enjoy hot with Tomato Sauce [psssst you Yanks - that's Ketchup]. I personally like gravy better.

  • 1 Pound Hamburger
  • 1 Can [10.5 oz.] Condensed Chicken Gumbo Soup
  • 1 Tablespoon Mustard
  • 2 Tablespoons Ketchup

  • Brown beef and pour off fat. Add remaining ingredients.
  • Cook over low heat 15 minutes.
  • Serve over sliced french bread or hamburger buns.

Mexican
Sandwiches

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 package (8 ounces) cheddar cheese, grated
  • 1 can (8 ounces) tomato sauce
  • 1 can (4 ounces) chopped ripe olives
  • 1 can (4 ounces) salsa
  • 4-6 hard rolls
  • 1 can (4 ounces) green chiles, chopped
  • Sprinkle with Cayenne Pepper

  • Brown ground beef and onion together; drain. Add remaining ingredients except rolls.
  • Pinch bread out of center of rolls; fill with the beef mixture. Wrap each roll in foil. Bake at 350 for 30 minutes. Yield: 4 - 6 sandwiches.

Jalapeno Meatloaf

Thanks to Dale's girlfriend, Helaine in Washington, for this Recipe
  • 2 lbs extra lean ground round
  • 1 sm. onion finely chopped
  • 2 eggs (beat well by hand)
  • 3/4 cup Italian style bread crumbs (I use Progresso)
  • 10-12 FRESH Jalapeno peppers (roasted & peeled and seeded)
  • If it seems dry add a little ketchup or tomato sauce

  • Combine everything till mixed well, shape into a loaf or round form.
  • Bake at 325 degree oven for 1 hour and 45 mins.
  • Also, this recipe can be doubled, tripled, etc.
  • You can use can Jalapenos but it WON'T be as good. The hardest and longest part of the recipe is the roasting of the Jalapenos. But! It is really well worth the effort.
Now I am sure you know this but Jalapenos are easy to roast. Put them under the broiler and blacken on each side. Throw in paper bag for about 20 mins. and then peel and remove some of the seeds.

Sweet & Sour Meatloaf

  • 1 egg
  • 5 tablespoons ketchup, divided
  • 2 tablespoons prepared mustard
  • � cup dry bread crumbs
  • 2 tablespoons onion soup mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound groung beef
  • 1/4 cup sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar

  • In a bowl, lightly beat the egg. Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt & pepper. Crumble beef over mixture and mix well. Shape into an oval loaf.

  • Place in a shallow 1 quart microwave safe dish; cover with waxed paper. Microwave on high for 11 - 12 minutes or until meat is no longer pink, rotating half turn once; drain.
  • In a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meat loaf. Cover and microwave on high for 3 - 5 minutes. Let stand for 10 minutes before slicing. 4 servings.
