Mexican Eggs

Vicki . . . You seem to enjoy Mexican dishes, as do I.
We serve this dish at our New Year's Day Brunch.......
for those who do not stay out too late or are just returning.

  • 1 Dozen Eggs
  • 1 Package (10-12) Corn Tortillas - chopped
  • 1 Medium Tomato - Chopped
  • 1 Medium Onion - Chopped
  • 3 Tablespoons of Oil
  • Shredded Cheddar Cheese

  • Heat the oil in the frying pan and fry the tortillas until brown.
  • Add the onions and fry until soft.
  • Add tomatos and fry until soft.
  • Add the eggs-cooked to your desire.
  • Add the cheese just before you are finished cooking
    or top the finished Mexican Eggs.

This recipe comes from a Sunday morning accident!!
  • 1/2 lb bacon
  • 1 lb frozed hash browns
  • 1 onion - diced
  • 1 bell peper - either red or green - diced
  • 6 eggs
  • 4 oz grated chedder cheese
  • 3/4 cup Pace picante sauce

  • Cook bacon crisp reserving 1 -2 tbs dripings
  • In a large skillet, start cooking hash browns
    according to package instructions substituting
    bacon drippings for like amount of vegetable oil.
  • While potatos are cooking, add onions and bell peppers
    on top of potatos.
    When potatos are ready to turn,
    turn onions and bell peppers
    with them so that everything cooks together.
  • Meanwhile, scramble eggs in a bowl,
    crumble in bacon strips
    and then stir in cheese and Pace.
  • When potatos are done, add egg, bacon, cheese and Pace mixture
    to the potatos in the skillet.
    Constantly stir until eggs are cooked and cheese is melted.
  • Serve with sourdough toast and additional Pace.
Notes: This recipe easily doubles (or halves)
The amount of any ingrediant may vary - if you
like more (or less) bacon, eggs, etc. it's OK.
You might like to try adding other ingrediants such as
diced green chiles, chopped olives and/or mushrooms
or topping with sliced scallions.

The fire in the Pace that you use is up to you -
medium adds more tang than mild does.
May be ( and has been sucessfully ) served for breakfast,
brunch or dinner.
Reheats in a microwave oven nicely.
