Waikiki Meatballs

Ingredients:

1 lb. ground beef
1 egg, beaten
1/4 c. bread crumbs
1/2 tsp. salt
1/4 tsp. ginger
1 (20 oz.) can pineapple chunks, drained and liquid saved
3 Tbsp. brown sugar
3/4 tsp. corn starch
1 tsp. soy sauce
2 green peppers, cut into strips


Directions:

Mix together the first 5 ingredients (beef, egg, bread crumbs, salt and ginger). Form into meatballs, dust with flour, and brown in a skillet with 3 tablespoons oil. After the meatballs are good and brown, remove from skillet and pour grease out. Drain pineapple chunks and save liquid, then add brown sugar, cornstarch and soy sauce to liquid in a measuring cup. Add enough water to make 1 cup liquid.

Pour this liquid into the skillet and keep heat on low. Keep stirring and sauce will thicken. After it thickens, put your meatballs, pineapple chunks, and pepper strips into skillet with the sauce and simmer for 10 minutes. Serve over rice. It serves 4 people.
