Chicken Piccata
Ingredients
4 boneless chicken breast halves
1/4cup flour
1/4 tsp salt
1/4 tsp white pepper
2 Tbsp oil
2 tsp Worcestershire sauce
1/2 cup chicken broth
1/4 tsp marjoram leaves
2 Tbsp fresh lemon juice
1/4 cup chopped fresh parsley
Directions: Place chicken breast 1/2 between 2 pieces of plastic wrap or waxed paper, working from the center, gently pound with the flat side of meat mallet or rolling pin until about 1/4 inch thick, remove wrap. Repeat with the remaining breast 1/2s. in small bowl combine flour, salt and pepper. Coat chicken halves with flour mixture. Heat oil in skillet over medium high heat until hot. Add chicken cook 3 to 5 minutes on each side until golden brown and no more pink inside. Remove from skillet, cover. Add marjoram, broth and Worcestershire to skillet. Cook and stir for about 2 minutes. Add lemon juice and parsley. Serve over chicken.
