Cod Fritters






Ingredients for cooking Cod Fritters
� pound of salted Cod fillets without fish bones 1� cups of Cod Broth or water 1� cups of All Purpose Flour 1 tablespoon of baking powder 1 tablespoon of fresh chopped cilantro 3 garlic cloves � tablespoon of salt Procedure for cooking Cod Fritters: - Break down the cod fillets into large pieces and place them in a large bowl. Fill the bowl with running water until you cover all the cod pieces. Put a lid on the bowl and let the cod rest in water for 24 hours. - Remove lid from bowl and drain the water in the sink. - Fill bowl with running water until you cover all the cod pieces and drain the water in the sink. Perform this step two times. - Place cod in a large cooking pot (4-5 quarts) and fill the cooking pot with running water until you cover all the cod pieces. - Place the cooking pot on stove. Turn heat to medium high. When water comes to a boil, reduce heat to medium and cook the cod for 30 minutes. Using a strainer and another large bowl, drain the water (Cod Broth). Fill up a measuring cup with 1� cups of Cod Broth. - Place the cod pieces on a large plate or bowl. Using your hands shred the cod into very tiny piece and remove & discard any pieces of skin or fish bones that you encounter. - Place shredded cod, flour, baking powder and salt in a large bowl and mix them well. - Peel garlic cloves. - In a mortar, use the pestle to grind cilantro (already chopped) and garlic cloves. - Add 1� cup of Cod Broth (or water), grinded cilantro and garlic, and mix well Note: I normally use a whisk to mix all the ingredients). The cod batter consistency should be similar to that of pancake batter. If for any reason you do not get this result, add slowly � cup of Cod Broth to the batter while mixing it. Continue doing this until you reach the desired batter consistency. Note: When I did this recipe, I used a total of 1� cups of Cod Broth, but it make take a little bit more. - Fill deep frying pan half full with cooking oil. - Pre-heat oil to medium high. - Use a ladle to pour slowly the cod batter into the frying pan (Note: Varying the content that you pour into the frying pan determine the size of the Cod Fritters). Fry the Cod Fritters at medium high heat. When the Cod Fritters turns golden brown at the bottom, use a skimmer or spatula to turn them over. Remove Cod Fritters from frying pan when the other side turns golden brown. Note: Pay close attention when you are doing this step because the Cod Fritters will turn golden brown fairly quick and you don't want to burn them. - Place Cod Fritters on a plate with paper towel to drain the oil. - Repeat the above two steps for the remaining cod batter left.
