Empanadillas Yaucanas

Ingredients for cooking ground beef
1 tbsp of dry oregano 2 tbsp of salt 2 large size potatoes 1 green pepper 1 onion 2 lbs of ground beef 2 bay leaves 1 can of chopped pimentos (second larger size) 5 cans of water (use pimentos can for measuring) 2 packages of "Sazon" seasoning 1 garlic head 3 tbsp of oil Procedure: - Using pestle, grind the oregano and salt in Mortar. Place them in small size container. - Chop potatoes into small squares and place them in a medium size container with water and salt to your taste. - Chop green pepper and onion into small squares. - Peel garlic. Using pestle, grind garlic in Mortar. Place garlic in container that has the oregano and salt. - Place inside a large pot the following ingredients: green peeper, onion, and garlic. Cook for 1-2 minutes at medium heat. - Add to the pot the following ingredients: pimentos, sazon, ground beef, water, oregano, salt, oil, and bay leaves - Using a metal spoon, stir ingredients to mix them all together. - Drain water from potatoes and add potatoes to the pot. - Stir mix occasionally and continue cooking at medium heat. - Remove pan from stove and let it cool down to room temperature.
Ingredients for "plantillas" dough
3 lbs of all-purpose flour 3 tbsp of salt 2 sticks of margarine or 1 � sticks of butter at room temperature 3 cups of boiling water for every 3 lbs of flour Procedure: - Mix boiling water, flour, and margarine in large bowl. - Kneed mix to make dough. Add flour as needed. The dough is ready when it doesn't stick to your hands anymore. - Make 25-30 balls with 2-3 inches in diameter. Procedure for making "Empanadillas de Carne": - Spread flour on a flat surface. - Flatten each ball with a roller to form "plantilla". The "plantilla" should have an approximate circular shape with a thickness of about 1/8". - Place 1-2 tbsp of the gound beef mix on the middle of the "plantilla". - Close the "plantilla" by folding it towards you and trying to form like a half moon. - Using a small plate, cut the "plantillla" to give it a half-moon shape. - Using a fork, press the borders of the "plantilla" to seal the mix inside. You have make an "empanadila". - Pour oil into a deep frying pan to a depth of about �" to 1". Heat oil to 350�F. - Fry the "empanadillas", a few at a time, in the oil. Using metal spoon, pour hot oil over the "empanadillas". - As the "empanadilla" turns golden brown and puff up, turn over to cook the other side. - Remove "empanadilla" and drain on paper towel.
