Fried Plantains




Ingredients
3-4 green plantains � teaspoon of salt 1 cup of water � head of chopped garlic Cooking oil Procedure: - Grate garlic. - Mix water, salt and garlic in a bowl. - Peel off the skin from the plantain. - Cut each plantain diagonally into 1-1�" wide sections. - Pour oil in deep frying pan up to height of �" to 1". - Turn heat to medium high. - When oil gets hot, reduce heat to medium. - Place plantain sections in pan and fry in oil. - When the plantain section starts turning golden brown at the bottom, turn over to cook the other side. - Remove plantain sections and place on plate. - Using "Tostonera", place one plantain section at a time inside "Tostonera" and flatten the plantain to a thickness of approximately 3/8" (do not smash the plantain). If you don't have a "Tostonera", you can do the following to flatten the plantain sections: o Get a cooking board, desert plate, and cut two pieces of aluminum foil in two squares (6" L x 6" W). o Place plantain section between the two aluminum sheets. o Place aluminum sheets with the plantain section on top of cooking board. o Flatten plantain section to a thickness of approximately 3/8" by pressing it down with desert plate (remember not to smash the plantain). - Pass flatten plantain quickly through water and salt mix and refried it again on both sides until it gets just a little bit more darker (not brown, but dark golden) and harder (like toasted). - Remove fried plantain and drain on paper towel.
