Baked Apples With Apple Cider Yogurt

1 1/2 cups apple cider
Juice of 1 lemon
Juice of 2 oranges
4 tablespoons firmly packed light brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon maple syrup
2 tablespoons currants
4 baking apples (Granny Smith or other tart apple)

---Apple Cider Yogurt---
2 cups apple cider
1/2 tart apple -- cored, in 1" chunks
1 tablespoon honey
3/4 cup non-fat yogurt

Preheat the oven to 400 degrees. In a small saucepan, combine all the ingredients except the apples and Cider Yogurt. Place on high heat and bring to a boil. Continue boiling, stirring frequently, until the liquid is reduced by half. Remove from the heat and set aside. Core the apples, but do not cut through the bottom of each. Peel each apple one-third of the way down from the top. Place the apples in a 2-quart baking dish. Pour the cider reduction into and over the apples. Bake for 30 to 40 minutes, or until tender, basting occasionally. To serve, place each apple in a bowl with the Cider Yogurt and top with a drizzle of the pan juices.

Apple Cider Yogurt: In a stainless-steel saucepan combine the cider, apple, and honey. Bring the mixture to a boil over medium-high heat and cook, stirring occasionally, until the liquid is reduced to 1/3 cup. Cool immediately and fold into the yogurt.
