Cinnamon Toasties

8 slices bread
1/4 cup reduced-fat cream cheese (neufchatel cheese or ricotta cheese, or fat-free cream cheese would work well here too)
Refrigerated butter-flavored spray (such as I Can't Believe I's Not Butter Spray)
3 Tbsps. sugar (I used Equal because I haven't gotten the Splenda yet)
1 1/2 tsps. cinnamon

Flatten bread with a rolling pin. Spread cream cheese on one side of half of the bread slices; top with remaining bread. Cut each into four squares. Spritz both sides with butter-flavored spray. In a small bowl, combine sugar and cinnamon; add bread squares and turn to coat both sides. Place on an ungreased baking sheet. Bake at 350 degrees for 8 to 10 minutes or until puffed and golden. Serve immediately. Yield: 4 servings.

Nutritional Analysis: One serving(4 squares) equals 233 calories, 5 g fat (2 g saturated fat), 9 mg cholesterol, 368 mg sodium, 41 g carbohydrate, 2 g fiber, 7 g protein.
