Sunshine Chicken

6 chicken breasts
or 1 chicken cut up
salt to taste
flour
3 tbsp. minced onion
1 6oz can frozen
orange juice, thawed

Season chicken with salt and pepper; coat with flour. Arrange chicken in greased baking dish; sprinkle with onion, pour orange juice over chicken. Bake covered at 350 degrees for 45 minutes, remove cover, bake for 15 minutes longer or until chicken is tender and browned. Garnish with orange slices and parsley, if desired.

Chicken Tetrazzini

6 chicken breasts,
boiled and boned
2 cans cream of chicken soup
1 empty can of milk
12oz package spaghetti, cooked
1 onion chopped
salt & pepper to taste
1/2pound Velvetta

Pull boiled chicken apart into bite size chucks. Mix all ingredients in a greased casserole dish. Bake in oven 30 minutes at 350 degrees until heated throughout.
6 to 8 servings

Saucy Chicken With Noodles

4 chicken breasts
2 tbsp. margarine
1 large garlic clove
1/8 tsp. crushed rosemary
1-10 1/2 oz. can cream of chicken soup
1/2 tsp. lemon juice
1/3 cup chopped parsley
2 cups cooked noodles

Melt butter in skillet; add breasts, garlic, & rosemary. Brown chicken well. Stir in soup & lemon juice; cover. Cook over low heat for 45 minutes to 1 hour or until tender. Toss noodles & parsley together. Serve chicken over noodles.

Chicken A L'orange

1 frying chicken, cut up
3 Tbsp. flour
3 Tbsp. cooking oil
2 Tbsp. cornstrach
1 cup frozen orange juice
6 Tbsp. brown sugar
1/4 cup vineger
1 tsp. nutmeg

Coat chicken with flour. Brown in hot oil in skillet. Place chicken in baking dish. Combine cornstrach and small amount of orange juice in small pan, blending well. Cook, stirring over low heat while adding remaining orange juice. Stir in brown sugar, vinegar & nutmeg. Cook, stirring constantly, until thickened. Pour sauce over chicken. Bake at 350 degrees for 40 to 50 minutes or until chicken is tender.

Chili Chicken

1 frying chicken
flour
1 cup catsup
1/4 tsp. garlic powder
1 Tbsp. sugar
1 tsp. paprika
1 tsp. salt
1/2 tsp. pepper
1/2 cup chopped onion
1/3 cup lemon juice
1 Tbsp. worcestershire
1 Tbsp. chili powder

Coat chicken with flour. Brown in oil in heavy skillet; arrange in shallow baking pan. Combine catsup, garlic powder, sugar, paprika, salt, pepper, onion, lemon juice, worcestershire, chili powder & 1/2 cup water in sauce pan, blend throughly. Simmer for 10 minutes, spoon sauce over chicken. Bake, basting frequently, at 325 degrees for 45 minutes or until chicken is tender.
