At my house nothing disappears as fast as the Toll House chocolate chip cookies made from the recipe on the back of the Nestle chips package. I keep trying to convince the males in the family that there are other cookies that are good too. Here are some of the cookies that I like to make for a little variety.

Cinnamon Oatmeal Chippers

I have discovered the secret to getting my men to eat oatmeal cookies -  throw in chocolate chips! These taste really great soft and fresh from the oven.

1 cup butter
1 cup brown sugar
3/4 cup sugar
1 egg
1 teaspoon vanilla
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups quick-rolled oats
1 or 2 cups chocolate chips
sometimes I throw in a handful of golden raisins

Oven 375 degrees.
Bake 8 - 10 minutes.

Beat butter and sugars. Beat in egg and vanilla. Sift dry ingredients and stir in. Add oats and chips. Drop by Tablespoons on non-stick or lightly greased sheets.

 

 

 



Yummy Caramel Bars 

These are my all time favorite cookies. I like them so much that I can only allow myself to make them once a year at Christmas because I can't resist eating them. I like to refrigerate or freeze them and eat them cold. Yummy!

32 caramels ( I use Kraft caramels.)
1/3 cup evaporated milk
1 cup flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup packed dark brown sugar
1 cup uncooked old-fashioned oats
3/4 cup butter or margarine
1  6oz. bag semisweet chocolate chips
1/2 cup chopped pecans ( I barely use any when I make it.)


Combine caramels and milk and melt in the microwave or in a double boiler. Stir to blend smooth. Remove from heat and set aside. Heat oven to 350°. Lightly butter an 11x7x1½ inch pan. Stir flour, soda, and salt , then add brown sugar and oats. Cut in the butter until it looks like coarse crumbs. Put half the mix in the pan and press evenly over the bottom. Bake 10 to 15 min until lightly browned. Remove from oven, sprinkle chips and nuts over the top. Then spread with the caramel to cover all. Sprinkle the remaining oats mix over the caramel. Bake 20 more minutes. Chill in refrigerator at least 2 hours before cutting so it can set.. Cut into tiny bars. ( about 24)
