Baked Chicken with Peaches
(Makes 4 servings)

This is my favorite dinner during peach season! It's sweet and delicious.

Ingredients:
4 boneless, skinless chicken breast halves

1/2 cup brown sugar
4 fresh peaches, peeled, pitted and sliced (canned peaches can also be used)
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
1-2 Tablespoons fresh lemon juice

1. Preaheat oven to 350 degrees.

2. Place chicken breasts in a lightly greased baking dish just big enough to fit them.
3. Sprinkle with 1/4 cup of the brown sugar.
4. Place peach slices over chicken.
5. Sprinkle with the remaining 1/4 cup brown sugar, cinnamon, ginger, cloves and lemon juice.
6. Bake at 350 degrees for 30 minutes (I usually let it go for at least 40), basting with the juices, or until chicken is cooked through and the juices run clear.

NOTE: For a fantastic sauce, mix 1/2 Tablespoon cornstarch with 1/2 cup cold water. Pour the mixture into the cooking juices. It will thicken and become a sauce to pour over chicken and peaches. I love serving this with mashed potatoes and pouring the sauce over them, too!
