Blueberry BBQ Sauce
(Makes 1.5 cups)

This is a delicious and unique sauce! It's a great way to add some fruit to your meal.
Frozen berries can be used if fresh are unavailable.

Ingredients:
2 cups fresh blueberries
1/2 cup balsamic vinegar
3 Tablespoons sugar
3 Tablespoons ketchup
2 cloves garlic, chopped
1 pinch salt

1. Place all ingredients into a saucepan.
2. Bring to a boil, lower to simmer, and cook for 15 minutes or until slightly thick, stirring occasionally.
3. Let it cool slightly.
4. Pour into blender and puree.
5. Use as you would any bbq sauce, on chicken, tuna, etc.

Note: I put some chicken breasts (sprinkled with salt and pepper) in the oven at 375 degrees for about 30 minutes. I then added the sauce and continued cooking for about 20 minutes. It turned out great!

These are only the recipes I've tried and enjoyed, but there are plenty more that look fantastic on the IBS recipe index!
