Honey-Mint Carrots
(Makes 6 servings) Simple and fat-free. I've also made it with 1/2 lb baby carrots. Ingredients: 6 medium peeled carrots, cut into 1/4 inch diagonal slices 1 Tablespoon honey 1 Tablespoon chopped fresh mint leaves or 1 teaspoon dried mint (the fresh is so much better!) 1. In large pan, heat 1 inch of water to boiling. 2. Add carrots and bring water back to boil. 3. Immediately reduce heat, cover pan and simmer about 10 minutes, or until carrots are crisp-tender. 4. Drain well and transfer to serving bowl. 5. Drizzle honey on top and sprinkle mint leaves over all. 6. Toss gently to mix well and serve immediately. Note: You can also nuke your carrots in the microwave with a small amount of water for about 8 minutes on High (or until crisp-tender) in place of steps 1-3. Recipe from Dancer^ at Recipezaar. |
