Hot Tuna Buns
(Makes 4 servings)

These are great for a quick weeknight dinner!

Ingredients:
2/3 cup fat-free or low-fat mayonnaise
3 Tablespoons sweet pickle relish
2 teaspoons prepared mustard
1 (12.5 ounce) can chunk-style tuna, drained well and flaked
1 cup shredded cheddar soy cheese (I use Veggie Shreds)
1/4-1/2 cup chopped celery
1/4-1/2 cup green onions (including tops)
4 rolls (I like to use French rolls)

1. In a bowl, stir together mayo, relish and mustard.
2. Add tuna, soy cheese, celery, and onions; stir until well combined.
3. Spread tuna mixture evenly over bottom halves of rolls and top with remaining roll halves.
4. Wrap each sandwich in foil.
5. Place on a baking sheet into a pre-heated 350° oven for 15-20 minutes or until soy cheese is melted.
6. Unwrap and serve immediately.

These are only the recipes I've tried and enjoyed, but there are plenty more that look fantastic on the IBS recipe index!
