Hot Tuna Buns
(Makes 4 servings) These are great for a quick weeknight dinner! Ingredients: 2/3 cup fat-free or low-fat mayonnaise 3 Tablespoons sweet pickle relish 2 teaspoons prepared mustard 1 (12.5 ounce) can chunk-style tuna, drained well and flaked 1 cup shredded cheddar soy cheese (I use Veggie Shreds) 1/4-1/2 cup chopped celery 1/4-1/2 cup green onions (including tops) 4 rolls (I like to use French rolls) 1. In a bowl, stir together mayo, relish and mustard. 2. Add tuna, soy cheese, celery, and onions; stir until well combined. 3. Spread tuna mixture evenly over bottom halves of rolls and top with remaining roll halves. 4. Wrap each sandwich in foil. 5. Place on a baking sheet into a pre-heated 350° oven for 15-20 minutes or until soy cheese is melted. 6. Unwrap and serve immediately. Adapted slightly from a recipe by Hey Jude at Recipezaar. |
