Orange-Raisin Muffins
(Makes 12-14 muffins)

These were originally made with dates, but my mother changed them to fit my family's tastes.
She's been making these for as long as I can remember, I just adapted them to make them a little lower in fat.

Ingredients:
1 whole orange
1/2 cup orange juice
1/2 cup chopped raisins
1/4 cup Egg Beaters
1/4 cup dairy-free margarine
1/4 cup unsweetened applesauce
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup white sugar

1. Cut the orange into pieces and remove the seeds; drop pieces into a blender with the orange juice and whirl until peel is finely chopped.
2. Drop in raisins, Egg Beaters, margarine, and applesauce; give blender a short whirl.
3. Stir together the dry ingredients; pour orange mixture over top and stir only until moistened.
4. Spoon into muffin tins that have been lined with paper liners or sprayed with non-stick spray.
5. Bake in a preheated 375 F oven for 15-20 minutes.
