Orange Pecan Tea Bread
(Makes 1 loaf)
This bread is amazingly
flavorful.
I didn't even add the glaze
because it tasted so great without it!
Ingredients:
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon allspice (or 1/4
tsp cinnamon and 1/8 tsp cloves)
1/2 cup sugar
1/2 cup soy buttermilk (half the recipe--use 1
1/2 tsp lemon juice)
1/2 cup toasted pecans
3 Tablespoons soy milk
3 Tablespoons canola oil
3 Tablespoons orange marmalade
2 teaspoons orange zest,
grated
1/2 cup Egg Beaters (or 4 egg
whites)
Glaze:
1/2 cup powdered sugar
2 teaspoons orange juice
1 1/2 teaspoons toasted pecan
1. Preheat oven to 350 F.
2. Spray a loaf pan with
cooking spray.
3. Combine flour and the next
5 ingredients in a large bowl.
4. Make a well in center.
5. Combine sugar and the next
7 ingredients and whisk into the dry ingredients.
6. Pour into the loaf pan.
7. Bake 45 minutes or until a
toothpick inserted in center comes out clean.
8. Cool on a wire rack.
9. Mix OJ and powdered sugar
and drizzle over loaf; garnish with toasted pecans.
Tip: To toast the pecans I
put them on a microwave-safe plate and nuke them on HIGH for 1 minute.
I then stir them and continue nuking them at 30 second intervals until
they're fragrant and brown!
