Oriental Baked Chicken
(Makes 4 servings) This is so easy, and the sauce is delicious and tangy! Ingredients: 1 can tomato soup (I used about 11 oz. Imagine Foods organic tomato soup) 3 Tablespoons vinegar 2 Tablespoons soy sauce 2 Tablespoons brown sugar 1/2 teaspoon ground ginger 1/4 teaspoon garlic powder 2 lbs boneless, skinless chicken breasts 1. Combine all except chicken. 2. In a 3 quart casserole, arrange chicken breasts. 3. Pour soup mixture over chicken. 4. Bake at 375 for 50 minutes or until juices run clear. 5. Stir sauce. (I had to stir it occassionally while cooking so it didn't get too thick) 6. Serve with white rice, if desired. The sauce tastes great on the rice! Recipe adapted from Campbells. |
