Paprikash Chicken
(Makes 4-6 servings)

My mom got this from Diet Workshop when I was younger and it's been a favorite ever since!

Ingredients:
1/4 cup water
1/2 cup diced onions
2 Tablespoons onion powder
1-3 lb fryer, cut up (I use boneless, skinless breasts)
1/2 cup fat-free or low-fat Italian dressing
12 ounces tomato juice (or 15 oz. tomato sauce)
2 cloves garlic, minced
1 Tablespoon paprika
salt and pepper
1 cup plain soy yogurt

1. In large skillet, combine water, diced onion, and onion powder; brown chicken in mixture.
2. When chicken is brown, add Italian dressing, tomato juice, garlic, paprika, salt, and pepper.
3. Cover and cook slowly until chicken is tender (30-40 minutes); remove chicken to plate.
4. Add soy yogurt to sauce, mix well and simmer but DO NOT boil; spoon over chicken.
5. This is great served over egg-free noodles. The sauce is also great over mashed potatoes!

These are only the recipes I've tried and enjoyed, but there are plenty more that look fantastic on the IBS recipe index!
