Peachy Muffins
(Makes 12 muffins--I got 15)



These flavorful muffins are chock-full of peaches!

Ingredients:
1/4 cup Egg Beaters or 2 egg whites, slightly beaten
1/2 cup plain soy yogurt
1/2 cup soy milk
1 teaspoon vanilla
1/4 cup canola oil
1 (28-29 ounce) can peaches, drained and diced
2 cups flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

Topping (you should have some leftover for later!):
1/2 cup flour  
1/2 cup sugar  
1/2 teaspoon ground cinnamon  
4 teaspoons butter or margarine, slightly softened

1. Preheat oven to 400 F.  
2. Spray 12 muffin cups with cooking spray.  
3. Make the topping, blending all ingredients with pastry blender or fork, for a course consistency; set aside.  
4. In a large bowl, combine all dry ingredients.  
5. In a smaller bowl, combine Egg Beaters, soy yogurt, soy milk, vanilla, and oil.  
6. Gently stir in the peaches.  
7. Add the peach mixture to the dry ingredient mixture, stirring just until moistened.  
8. Do not overmix or you will have tough muffins.  
9. Fill the muffin cups with batter, and sprinkle each muffin generously with topping.  
10. Bake 20-25 minutes.
