Mum's Simple Economy Scones
(Makes about 12 scones)
These are simple and taste
great with tea. Try slathering them with your favorite jam!
Ingredients:
2 cups self-rising flour (or
2 cups all-purpose flour + 1 Tbsp baking powder + 1/2 tsp salt)
1/4 teaspoon salt (can omit
if making your own self-rising flour)
2 Tablespoons soy margarine
1 cup soy milk
1. Preheat your oven to 475 F.
2. Sift flour and salt in a
bowl.
3. Rub in the margarine with
your fingertips, until it resembles breadcrumbs (I use a pastry cutter,
and it never really gets to the "breadcrumb" stage).
4. Make a well, and add
almost all of the soy milk (Reserve about 1 Tbsp).
5. With a butter knife (or
pastry cutter), quickly work in the soy milk to the flour, making a
dough.
6. On a lightly floured
surface, knead the dough very lightly.
7. Flatten gently with your
hands to about 1/2 an inch thick.
8. Use a round cutter to cut
out discs.
9. On a cookie sheet lightly
sprayed with non-stick cooking spray, place scones next to each other.
10. Brush with reserved soy
milk.
11. Bake for 10 minutes, or
until scones sound hollow when tapped.
12. Serve with tea and
strawberry jam and you have Devonshire tea (usually involves whipped
cream, too, but we can't have that!).
13. Or add herbs/grated soy
cheese for savoury scones to serve with soups and casseroles.
