Waldorf Rice Salad
(Makes 4 servings)



This is a delicious side dish on a warm Summer evening. If the raw veggies make you nervous feel free to use less or omit them, but this amount doesn't bother me.

Ingredients:
1 1/3 cups red apple, cored and diced (I use McIntosh)
2 Tablespoons plus 2 teaspoons pineapple juice
2 cups white rice, cooked and cooled (or brown rice if you tolerate it well)
1/2 cup celery, chopped
1/2 cup walnuts, chopped
1/2 cup raisins
1/4 cup carrots, chopped
1/2 cup plain soy yogurt
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/8 teaspoon coriander

1. In a large bowl, toss apples with pineapple juice.
2. Stir in rice, celery, walnuts, raisins and carrots.
3. In a separate bowl, blend soy yogurt, salt, cinnamon, and corriander.
4. Stir the dressing into the apple mixture.
5. Cover and refrigerate.
6. Serve!
