Wisconsin Cheese Chowder
(Makes 6 servings) This is comfort food at its best. Ingredients: 3 cups diced carrots 1 cup sliced celery 3 1/2 whole sliced scallions 4 cups diced red potatoes, peeled 1 (10 ounce) can chicken broth 1/2 cup flour 2 cups soy or rice milk salt and pepper, to taste 1 dash of fresh ground nutmeg 3/4 cup dry white wine (optional) 3/4 cup cheddar soy cheese, shredded 3/4 cup swiss soy cheese, shredded cooking spray 1. Spray a dutch oven with cooking spray. 2. Place over medium heat and add carrots, celery, and scallions; saute until softened. 3. Add potatoes and chicken broth; bring to boil, cover and simmer for 25 minutes or until potatoes are soft. 4. Place flour in a bowl; add milk and blend with a whisk. 5. Add to pot and season with salt, pepper, and nutmeg. 6. Add white wine (if using); cook for a minute to blend flavors. 7. Remove from heat and add cheeses, stirring to melt.
