LAUKI CURRY

Preparation:
cut lauki into small pieces
chop 2 medium size onion

Method:
heat 3 spoons of oil in a pan
+1 spoon of jeera seeds
+chopped onions .........fry till golden brown
+1 spoon termeric powder
+1 spoon daniya powder
+lauki pieces
+water...........allow it to boil till the lauki is cooked
+salt..............close the lid and cook for 5-8 minutes
+ 1/2 cup of tamato puree.......low flame

Garnish with coriander leaves, serve with hot rice.

STUFFED BENDI FRY

Preparation:
slit bendi longitudinally
 make dry masala................1 sppon od chilli powder,1/2 spoon termeric powder, 1/2 spoon of garam masala powder, salt, 1/2 spoon ginger/garlic paste

Method:
put the dry masala into the slit of bendi
deep fry ................low flame
remove it on the tissue paper to drain the oil

CAPSICUM CURRY

Preparation:
cut capsicum into small pieces
chop 2 onions
soak handful of tamarind in warm water

Method:
heat 3 spoons of oil in a pan
+capsicum pieces and fry it well
+chopped onions...........fry till golden brown
+1/2 cup of tamarind water
+1 spoon jaggery
+1 spoon garam masala powder
+ 1/2 cup water..............allow it to boil for 5 minutes
+season it with mustard seeds, 2-3 dry red chillies and curry leaves

serve it hot with curds rice

VEGETABLE RICE

Preparation:
soak  2 cups of rice for 30 minutes
chop 2 medium size onions
clean and cut vegetables..........carrots, beans, green peas, potatoes, beat root

Method:
heat 3 spoons of oil in a pan (preferably in the cooker)
+2-3 dalchini
+4-5 cloves
+2-3 cardamom
+5-6 cashew nuts and raisins
+1 tej patta or bay leaf
+few curry leaves
+ onions and fry till light brown
+ cut vegetables..............fry with all the ingredients for 5-10 minutes, till vegetables softens
+soaked rice
+1 spoon of garam masala, chili powder and 1/2 spoon turmeric powder
+salt
+water............pressure cook

EGG MASALA

Preparation:
chop 2 medium onions
chop 2 medium tomatoes
boil 4 eggs
finely chop ginger and garlic

Method:
heat 3 spoons of oil in a pan
+1/2 spoon of mustard seeds...........wait till the seeds break
+few curry leaves
+chopped onions..............fry till brown
+chopped ginger and garlic
+chopped tomatoes
+1 spoon of garam masala
+1/2 spoon chili powder
+1/2 spoon turmeric powder
+salt
+1/2 cup water................give it a boil
+boiled egg

Garnish with coriander leaves and serve with hot rice and onion rings

PEPPER EGG

Preparation:
chop 2 cups of onions
chop 5-6 green chilies
boil 4 eggs

Method:
heat 3 spoons of oil in a pan
+chopped onions............fry till brown
+chopped chilies
+boiled eggs
+1 spoon of pepper
+salt
+few drops of lime juice

Serve it hot with rice

BANGAN FRY

Preparation:
slice 2 large brinjal into 4 round pieces...........keep it in water for 30 minutes

Method:
make a thick  paste of ............
2 spoon of chili powder
1 spoon garam masala
1/2 spoon turmeric powder
salt
1/2 spoon jeera powder
1/2 daniya powder
1 spoon of oil

spread this masala on the brinjal pieces
shallow fry the pieces in low flame or you can grill the pieces

Serve it with curds rice
