FISH FILLETS

Preparation
take fish of your choice cut and clean it.
chop 1 carrot into long pieces
slice onion (long)
chop 1 bunch of palak

Method:
to make fish stalk...................
take the fish pieces in a pan
+chopped carrots
+sliced onion
+few curry leaves
+1 tej patta
+1 cup water................give it a boil for 20 minutes

to make sauce......
remove the fish pieces from the stalk  and drain the carrot
heat the fish stalk until thick
+salt
+1 spoon of black pepper powder
+3 spoons of tomato puree................give it a boil
+2 spoons of fresh cream.........remove from fire
+2 egg yolk
+chopped palak
+fish pieces

PAN-FRY FISH

Preparation:
Marinate fish with...........salt, 1 spoon of lime juice, 1 spoon of black pepper powder,  3-4 drops of olive  oil for 20 minute, later shallow fry the fish,
chop 1 small onion
chop 1 small tomato

Method:
for the sauce..................
heat 3 spoons of oil in a pan
+chopped onions
+chopped tomato
+1 spoon of  chopped garlic............keep this aside

meanwhile..............
take 3 spoons of oil in a pan
+1 spoon of sugar........melt it till light brown
+150 ml of whit wine(grape)
+the above onion tomato mixture
+salt
spread the mixture on the fish on either sides..............cook it for 10 minutes............low flame
+1/2 spoon of olive oil

Garnish with spinach leaves

 LEMON PRAWN

Preparation:
Marinate the prawns with salt, 2 spoons of lemon juice for 1 hour
chop 2  medium onions
finely chop 3-4 garlic pods
remove 4-5 spoons of thick coconut milk from grated coconut

Method:
heat 3 spoons of oil in a pan
+chopped onions..........fry till light brown
+chopped garlic............fry for just 2 minutes
+marinated prawns................high flame
+3-4 spoons of chopped coriander leaves
+coconut milk............stir well,  allow it to boil till the prawn softens, do not close the lid

Serve it with fried rice (can use a little Garam masala (optional)

PRAWN ROLL

Preparation:
marinate prawns........... as said above, cut them into small pieces
chop 2 onions

Method:
For the stuffings..........
Heat 3 spoons of oil in a pan
+chopped onions.............fry until goldn brown
+chopped prawns
+1 spoon of green chili sauce or green chili paste
+2 spoons of grated coconut
+2 spoons of grated carrot
+salt
+1 beaten egg............mix it well.

For the base..........
Take 1 cup of maida
+1 beaten egg
+salt
+3-4 spoons of milk............mix all the ingredients well
Make a dosa or pan cake of the batter
Fill in the prawn stuffings and roll it. close the roll from all the sides from your wet fingers.

Take 2 spoons of oil in a pan and shallow fry the prawn rolls until light brown and crispy before serving.

PEPPER FISH FRY

Preparation:
take boneless fish here
marinate the fish........................2 spoons of lemon juice and salt for 20 minutes

Method:
take a small piece of butter in a pan ( 20 gms)
+2 spoons of maida flour
+salt
+2 spoons of pepper.........stir well, remove from fire after 3-4 minutes
Dust the fish pieces on this mixture and shallow fry until golden brown

Garnish with onion and lemon rings

FISH CURRY

Preparation:
Marinate fish pieces with 2 spoons of lemon juice and salt
chop 2 medium onions
chop ginger and garlic

Method:
take 4 spoons of oil in a pan
+4-5 curry leaves
+1/2 spoon of mustard seeds
+chopped onions..............fry until golden brown
+chopped ginger and garlic
+ 1 cup of chopped tomatoes
+1 spoon of chili powder
+1/2 turmeric powder
+salt
+fish pieces..............cook it for 10 minutes

Garnish with coriander leaves
