This recipe is good for diabetics. It came from "The Art of cooking for the diabetic".

Never Fail Blintzes

Filling

1 lb dry cottage cheese (or farmer's cheese)
1 med eff, beaten
1 T margarine
Sugar substitute equivilent to 1 T sugar
Dash of salt

Batter

2 eggs, beaten until light and foamy
1/2 t salt
1 t sugar (for browning)
1 1/4 c water
1/2 t grated orange rind.
2 T margarine, melted
1/4 t baking powder
1 c sifted all purpose flour

Make the Filling: Press Cheese through a ricer or fine strainer; mix well with remaining filling ingredients; set aside. Prepare the blintzes: Preheat oven to 400 Deg F. Prepare a 7 inch frying pan and a shallow baking pan with vegetable pan-coating. To make the batter, combine eggs, salt, water, orange rind, 1 T melted margarine, baking powder, and flour; beat until smooth. Pour 2 1/2 T at a time into a heated prepared frying pan. Tio pan so batter spreads thinly over the entire pan. Pour off excess. Cook over low to medium until top is dry and starts to blister. Turn out onto board. Put 1 T filling in the blintz, fold in the sides and roll until filling is enclosed. Place them int he prepared baking pan. When all blintzes are in the pan, brush tops with remaining 1 T melted margarine. Bake for 30 minutes, until lightly browned.

Yeild: 15 blintzes (1 serving: 3 small filled blintzes)
