This recipe is good for diabetics. It came from "The Art of cooking for the diabetic".

Orange French Toast

2 medium eggs, beaten very lightly
1/3 c unsweetened orange juice or the juice of one medium orange
1/2 t pure vanilla extract
1 t grated orange rind
4 slices bread (day old is better than fresh)
2 t margarine

Mix together the eggs, orange juice, vanilla, and orange rind; pour into a pie plate. Dip each slice of bread into mixture until all liquid is absorbed into bread. Heat margarine in a large frying pan over medium heat and lightly brown bread on both sides.
