This recipe is good for diabetics. It came from "The Art of cooking for the diabetic".

Skim Milk Mayonnaise

1 1/2 t granulated gelatin
1/4 c cold water
1 1/2 c skim milk
2 medium egg yolks, beaten
1 t salt (Optional) 1 1/2 t dry mustard
1/4 t paprika
1/4 c white vinegar
Sugar substitute equal to 3 t Sugar

Soak gelatin in cold water; set aside. Scald milk in the top of a double boiler. Slowly pour over beaten yolks, stirring constantly to prevent curdling. Return egg-milk mixture to the top of the double boiler and add mustard, salt, and paprika. Cook over simmnering water, stirring constantly until mixture is thick enough to coat the spoon. Remove from heat. Add vinegar, sweetener, and gelatin; blend well. Pour into a pint jar, coer and chill. Stir before using. Yeild: 16 (2 Cups)
