Chocolate Milk Cake

Butter and flour for the baking pan
1 c whole flour
1/4 c unbleached all purpose flour
1/2 c wheat germ
2 t baking powder
2/3 c unswweetened cocoa
1/4 c vegetable oil
1 3/4 c apple juice concentrate
1/2 c milk mixed with 5 T nonfat dry milk
2 whole eggs
1 egg white
1 t vanilla extract
Whipped cream for garnishing (Optional)

Preheat the oven to 325 deg. Lightly butter and flour a 13x19 inch baking pan.

Place the flours, wheat germ, baking powder, cocoa, and milk in a large mixing bowl; beat until smooth. Add the eggs, egg white, and vamnilla and beat until thouroughly mixed.

Pour the batter into the prepared baking pan. Bake until the top springs back when lihtly pressed, about 35 minutes. Cool slightly in the pan before turning out onto a cooling rack to cool completely. Or serve right from the pan, garnished, if desired.

Makes 13x19 inch cake
