Mom's Red Velevet Cake

Red velevet Cake

2/12 c flour
1 1/2 c sugar
2 T cocoa
1 t soda
1 t salt
2 eggs
2 c salad oil (vegetable oil)
1 c buttermilk
2 oz or 1/4 c red food coloring
1 t vinegar
1 t vanilla

Place all dry ingredients in a mixing bowl. Blend eggs with fork and add oil. Add all liquid ingredients to dry ingredients and mix until smooth with wire whip or mixer on mdium speed. Scale equally into 3 (8 inch) layer pans. Bake 30 minutes at 350 Degrees in the oven. Remove from pans after they have been allowed to cool.

Frosting

8 oz cream cheese softened to room temperature
1 LB box powdered sugar
1/f LB butter
1 t vanilla
1 c chopped pecans

Mix well until smooth. Spread on cooled cake.
