This recipe is good for diabetics. It came from "The Art of cooking for the diabetic".
Carrot Rasin Salad
3 c shredded carrot
1/2 c low calorie cooked dressing
1/3 c (1 1/2 oz box) Seedless rasins
1/4 t salt (optional)
Sugar substitute equivilent to 6 t sugar
Lettuce leaves
Combine all ingredients except lettuce leaves, thoroughly; chill at least 2 hours before serving. Serve on crisp lettuce
