World's Best Tasting Science Project
This is rock crystal candy.  It only takes 15 minutes to set up, but 2-3 weeks to grow.

Materials :
1/2 cup water
1 cup sugar
Food Coloring
Tall Glass Jar
Cotton String
Chopstick or Popsicle Stick


Procedure:
1.  Bring the water to a boil.
2.  Turn off the heat and immediately add sugar to the water.  Stir viborously for 2 minutes until the sugar is dissolved.  The liquid should be see-through.
3.  Add a drop of food coloring.
4.  Pour the mixture into the tall glass jar.
5.  Cut a piece of string 2 to 3 times the height of the glass jar.  Tie one end of the string to the Chopstick/Popsicle Stick.  Lay the chopstick on the rim of the jar and let the string dangle into the sugar mixture.  The dangling end can coil around the bottom of the jar.


Waiting:
Let the mixture sit for two or three weeks.  This will allow the candy crystals to grow.  You can lift the string out of the jar every few days to check on the progress. (Just make sure the string gets back in the sugar mixture after you're through looking!)  Then, when you're happy with the amount of crystals that have grown on your string, remove it and hang it up to dry.


Scientific Facts:
When you dissolved the sugar in the water, the sugar broke down into invisibly small particles that mixed with the water. (physical change)  But those particles are social.  They like each other.  Give them a place to collect (on the string) and they'll build back up into something you can see - crystals!
