BANANA BREAD

(I've tried a few recipes for banana breads and this is my favorite. I hope you like it!)
INGREDIENTS:
  • 1 cup very ripe mashed banana (two large bananas)
  • 1 and 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup white sugar
  • 1/3 cup margarine, softened
  • 2 eggs
  • 1/2 cup chopped nuts, (optional)
DIRECTIONS:
Preheat oven to 350 degrees.  Grease 8 and 1/2" by 4 and 1/2" loaf pan.  Sift flour, baking powder, baking soda, salt and sugar together in a large bowl. Mash banana really well in another bowl. Add eggs and margarine to the banana and mix. Mix wet ingredients with the dry ingredients until blended well. Bake about an hour or until your tester inserted in the center comes out clean. (I find I have to bake mine about one hour and fifteen minutes.) I have an oven thermometer, so I know that the temperature is exactly 350 degrees.
(If you use a loaf pan that is another measurement, you will have to watch it and test it to know how long it will take.)
