Sunday, September 19. 2004 - NNY Poultry Fanciers Annual Show will be at the Waddington Arena.

 

The May Swap Meet was a huge success, even though the weather wasn't very cooperative.

Using Up Those Summer Eggs

The incubators have been put away for another season. The hens are still popping out the eggs. You are so tired of deviled eggs, pickled eggs and egg and olive sandwiches. Here are a few of the ways that I use up the eggs:

 

1. Beat up two or three eggs. Drain a can of tuna fish. Break some white bread up and stir in a little chopped onion - a splash of milk. Some salt and pepper. Drop the mixture on an oiled griddle in small paddies. Turn like pancakes.

2. Heat up some cooked potatoes as for homefries. Break some eggs in. Salt and pepper. Stir

like scrambled eggs.                                                                                                                                                                                                        .

3. I like this one (the others make faces) try it once and see. Using left over potato or macaroni salad, mayonnaise type, mix salad with a few beaten eggs, salt and pepper. Cook on oiled griddle. Make them pancake size, turn over, top with a slice of sandwich cheese or cheese sauce. 4. Add an egg, before cooking, to cornstarch pudding.

5. Add an egg or two to your pancake batter.

6. Instead of pancakes with sausage swimming in syrup, forget the syrup and fry or poach some eggs to go with the sausages.

7. To freeze eggs - break out - stir gently, do not beat. Add a little salt. Put in different sized containers for different uses. Yogurt or margarine containers are good.

8. Cats and dogs like a dish of scrambled eggs now and then.

9. Give your dog a raw egg every few days. Good for their coats.

10. In baking - four Old English eggs can be used in place of two large eggs.

 

And here are some recipes taken from our extensive cookbook collection:

 

Chocolate Angel Food Cake

Ingredients: 1 cup cake flour, 1/2 cup cocoa, 2 cups sugar, 1 1/2 cups egg white, 1 tsp cold water, 1/4 tsp salt, 1 tsp cream of tartar and 1 tsp vanilla.

Preheat Oven to 400 degrees. Sift flour, cocoa and 1 cup sugar. Beat egg whites, water and salt until frothy. Add cream of tartar. Beat until stiff. Beat in rest of sugar and the vanilla. Fold in flour mixture. Pour into ungreased tube pan. Reduce oven to 375 degrees. Bake for 35-40 minutes


Impossible Pumpkin Pie

Ingredients: 3/4 cup sugar or sugar substitute, 1/2 cup Bisquick, 2 tblsp. Margarine, 1 (13 oz.) Can of evaporated milk, 2 eggs, 1 (16 oz.) Can of pumpkin,

2 1/2 tsp. Pumpkin spice, and 2 tsps vanilla.

Beat 2 minutes until smooth. Pour into 9 or 10 inch pan greased with margarine. Bake at 350

degrees for 50-55 minutes.                          .

Fiesta Egg Bake

Ingredients: 5 eggs divided, 1tblsp milk, 1/2 tsp garlic powder, 1 (4 oz.) Can green chiles, chipped, 1 (8 1/2 oz) pckg com muffin mix, 1 (7 oz) can whole kernel com, drained, 1/3 cup chopped green onions (include top) and 1/4 cup grated cheddar cheese.

Oven 400 degrees. Lightly oil 4 custard cups. Mix one egg, milk, garlic, chiles. Stir in muffin mix, stir in com and onion. 1/2 cup mixture in each cup. Make indentation in mix. Break an egg in each one. Sprinkle with cheese. Bake 20-25 minutes - top with tomato or spaghetti sauce.

Hello everyone. Hope everybody that did some hatching this spring had a successful hatch. My hatches this spring did well and all, but my turkey. She had her own nest, hatched all the eggs, but no survivors. I don't understand what went wrong. However, she is trying again and has a nest full of eggs now.

 

Just this week we sent out a mailing of raffle tickets. Please try your best to get those sold and sent back to Tammy. This raffle helps the Club to offset the price of our September Show. As everyone probably knows there is-a National Show coming to Syracuse this fall in place of the Yankee Fall Classic. This could be a once in a lifetime chance for some of us to ever attend a Show of this caliber and size. Try to attend. Our Club is a part of this Show as well as several other New York Clubs. Gary Wells and I are trying to raise money for prize money in the Old English section of the Show. We decided to do this because the Old English are a big part of most of our local New York Shows.
