According to the death certificate for Fred Kassell, my great great great uncle, brother to great great grandma Emma Kassell Campbell; their mother was Frances Koffstadter. The type is rather tough to read so I might have the spelling a little bit off.
Again according to the death certificate - both parents were born in Germany. I have been unable to find any Koffstadter families in St. Louis. I have searched all the possible spellings that I could concive beginning with K; but another researcher found a John Coffstetler in Calhoun County, Illinois, Illinois Precinct, Illinois 1850, page 303 census.

I did find a John and Frances Kassell on the 1860 Census for St. Louis with 2 children: Louis and Simon. Since we suspect that Emma and Fred were 2 of 6 children born to their parents. This could be our family. But, our Frances could have been of the 1850 Illinois Coffstetler, Calhoun County, Illinois family.
