Berried Delight

1 1/2 cup graham cracker crumbs
1/4 cup sugar
1/2 cup butter - melted
1 8-oz package cream cheese - softened
2 tablespoons milk
1 large box vanilla pudding (the cooked kind)
3 1/2 cups cold milk
2 8-oz tubs of Cool Whip Topping

Combine the graham cracker crumbs and melted butter. Press firmly in a 13x9 inch pan. Chill.  Beat cream cheese with 1/4 sugar and 2 tablespoons milk until smooth. Fold in 1 8-oz tub Cool Whip Topping. Spread over the chilled crumbs. Then arrange fruit of your choice to make the next layer. Using 3 1/2 cups milk, cook vanilla pudding as directed on the package. Pour over fruit and chill until firm. Spread the remaining Cool Whip over the pudding layer. Garnish with more fruit if desired.

Note: You can use any fruit you want, even canned pie filling. If using fresh fruit, peaches are great. My Russian friend Serguei loved this recipe. One of the girls I work with makes this dessert lots, and Serguei always had extra helpings. She made it with fresh peaches, frozen/thawed blue berries, strawberries when is season, and even pie fillings. This is easy to make and a big hit at parties. You won't have to worry about bringing any along back home. It goes fast.
