Russian Cake and Frosting
CAKE:
 
2 cups flour
2 cups sugar
2 teaspoons baking soda
1 cup chopped walnuts
2 eggs
1 large 20 ounce can crushed pineapple - -
         - -  (in it's own juice - just dump it all in)
1 teaspoon vanilla
 
FROSTING:
 
8 ounce package cream cheese (softened)
1-1/2 cups powdered sugar
1 stick butter, softened
1 teaspoon vanilla
1/2 cup chopped walnuts

To make cake: Spray pan with PAM. Mix all cake ingredients together and pour into pan. Bake at 350 degrees for 30-40 minutes. Cool.

To make frosting: Mix all ingredients together and spread over top of cooled cake. Sprinkle with a few more walnuts for garnish.

*Serguei said he never had this cake before but he liked it very much. He ate two pieces at our dinner party. Had another piece a hour later at work. And then asked me if I could do him a favor and bring him another piece when I came into work the next day. When I told him there was already another piece waiting downstairs in our kitchen for him and Emil (our other Russian part-time employee) he was so happy he almost fell off his chair. Serguei said he doesn't like most American cakes because they are too sweet. I made this cake again a few weeks later to treat everyone at our Serguei's Last Day Party. He thanked me again and said a cake like this deserved alot of respect.
