Recipe - 12.

SPAGHETTI PIE
6 oz. spaghetti
2 Tbsp. butter
1/3 c. grated Parmesan cheese
2 well beaten eggs
1 lb. ground beef
1/2 c. chopped onion
1/4 c. chopped green pepper
1 8oz. can diced tomatoes
1 6oz. can tomato paste
1 tsp. sugar
1 tsp. diced oregano
1/2 tsp. garlic salt
1 c. cottage cheese
1/2 c. shredded Mozzarella cheese

Cook and drain spaghetti then stir in butter, Parmesan cheese and eggs. Form spaghetti mixture into a crust in 2 buttered 10 inch pie plates. Brown beef, onion, and green pepper in a fry pan. Drain any grease. Stir in un-drained tomatoes, paste, sugar and garlic salt. Heat. Spread cottage cheese over spaghetti crusts, fill each pie with the beef/tomato mixture. Bake pies uncovered at 350 degrees for 20 minutes. Sprinkle mozzarella cheese on top of each and bake 5 minutes more.

*Note: This recipe only called for one pie crust, but the entire mixture makes enough for two nice sized pies. These pies also freezes well. Bake pies and let cool after cheese melts and freeze for up to 4 weeks. Thaw and reheat in a microwave.

*Note: If you want to use this at a dinner party, you can make the pies up a day or two in advance, cover and put in fridge. Then bake just before quests arrive. DINNER IS SERVED! A nice tossed salad and rolls complete the meal.
