One pot chicken purée

This recipe is suitable for freezing.
Ingredients:
1 small parsnip, peeled and sliced
1 tsp oil
4oz (110g) chicken breast, cut into chunks
3 medium potatoes, peeled and chopped
1 medium carrot, peeled and sliced
½ pt (300ml) water
Directions:
1. Heat the oil in a pan, add the parsnip and cook gently for 2-3 minutes.
2. Add chicken and cook for another 2-3 minutes.

Add potatoes, carrot and water, bring to the boil and simmer, covered,
for about 20 minutes or until the chicken is cooked through and the
vegetables are tender.
4. Purée in a blender until the desired consistency, adding more water or milk if necessary.
