BLUE CHEESE FILLET

Ingredients:
1/4 pound blue cheese crumbles
1/2 cup Japanese breadcrumbs
2 tablespoons heavy cream
6 steaks
Directions:
Place
the blue cheese crumbles into mixing bowl, add the breadcrumbs and
heavy cream. Mix well with spatula until all ingredients are fully
incorporated. Refrigerate the mixture over night to meld the flavors
(can be refrigerated up to 4 days).
Pull the blue cheese mixture out of refrigerator 30 minutes prior to use and grill steaks to your desired cooking style.
Spread 2 tablespoons of the blue cheese mixture on top of each steak.
Place under broiler for approximately 1.5 minutes or until golden brown.
