Ingredients:
1/4 cup Red or Green Bell Pepper (chopped)
2 Egg Whites, beaten
2/3 cup Pizza Sauce (can be purchased or home made)
Nonstick Cooking Spray
3 cups cooked Brown Rice (cooled)
1 cup Shredded Mozzarella Cheese
1 tsp Ground Black Pepper
1 cup Sliced Mushrooms
1 Clove of Garlic (crushed)
1 Green Bell Pepper (seeded and cut into rings)
1 tbsp Grated Parmesan Cheese
Directions:
Preheat the oven to 400°F.
Combine the cooled rice with 1/3 cup of the mozzarella
cheese and the egg whites.
Once everything is combined, press the mixture into a 12 in. pizza pan sprayed with
cooking spray and bake for 5 minutes.
Combine the pizza sauce with the pepper and
garlic and spread over the baked rice crust.
Top with the bell pepper, mushrooms, and the parmesan cheese. Sprinkle the top evenly with the remaining mozzarella cheese.
*Optional* Garnish with green
pepper rings
Bake for 10 minutes and serve.
