Eggs on Bread

Ingredients:
 
1 teaspoon oil
1 large slice of onion, chopped
1 thick slice of red pepper, chopped
2 eggs, lightly beaten
1 thick slice of cheddar, cut into cubes
Salt
Paprika
2 slices of bread

 
Directions:

Heat the oil in a small pan, add onion and fry for a minute, stirring.Add pepper and fry for another minute, stirring.

Turn down the heat and add the eggs, then stir until cooked (the same as if making scrambled eggs), season with salt to taste.

Once the eggs have the desired consistency, add the cheese and stir for a few seconds until the cheese starts to melt but still holds its shape.

Toast the bread and top with the eggs, sprinkle with paprika and serve.
