Hawaiian Wedding Cake

This cake is so moist, and as Hawaiian as you want it to be.
Ingredients: For the Cake:
2 cups flour
2 cups sugar
2 eggs
2 tsp baking soda
1 cup chopped nuts
1 cup coconut
1 (20 oz.) can crushed pineapple with juiceFor the Frosting:
1 (8 oz.) pkg cream cheese
1 1/2 cup powdered (icing) sugar
1/2 cup butter
2 tsp vanilla Directions:Thoroughly
mix all the ingredients in a large mixing bowl, making sure to scrape
the sides occasionally. Once everything is mixed well, pour the batter
into a greased 13 x 9 inch rectangular cake pan.
Bake at
350 degrees for 40-45 minutes, or until a wooden tooth pick inserted in
the center comes out completely clean. Invert the cake onto a cooling
rack and let the cake cool to room temperature.
While the cake
is cooling, make the frosting by puting the ingredients in a mixing
bowl and blending well. Scrape the sides of the bowl to make sure all
the ingredients are completely mixed in.
Once the cake has
completely cooled, apply the frosting to the top and garnish with
chopped nuts, coconut or chopped fruit if desired.
Note:
For an added coconut taste, you can add 1 tsp of coconut extract in the cake and 1/2 tsp coconut extract in the frosting.
