Pizza Grilled Cheese

This
recipe can be easily modified to create your favorite style of pizza in
sandwich form. For safety, use only fully cooked or pre-cooked meats.
Food poisoning due to under cooked or raw meat is not fun!
Makes 2 Sandwiches.
Ingredients:
4 pieces of sliced bread
butter **(not margarine!)**
4 mozzarella slices
Pepperoni (cut in half or mini)
Italian seasoning or basil
Parmesan cheese (optional)
Pizza sauce (optional, for dipping)
Directions:
Warm a medium or large skillet over medium heat. While the pan is heating, butter each piece of
bread on one side.
When skillet is hot, place a piece of bread butter
side down on the skillet then add one slice of cheese and small shake of
Italian seasoning or basil (add a small shake of Parmesan cheese here
too if desired).
Top with a desired amount of pepperonis (I use about 8
-10 whole regular pepperoni slices per sandwich). If any other toppings are
desired, add them now.
Add another slice of mozzarella and top with a slice of
bread, butter side up. Repeat with second sandwich.
When bottom
slice is golden brown , flip the sandwich over carefully and cook until it too is golden brown.
Once
both sides are browned to your liking, remove the sandwich from the
pan, cut into triangles if you wish to do so, and serve with pizza
sauce if desired.
