Veggie Tortillas

My friend Don got a recipe from a friend of his, experimented a bit, and came up with this. It came out yummy!
 
Ingredients:
 
Tortilla: Sundried Tomato & Basil
Blue &Feta cheeze
black beans (soak overnight)

tomatoes
sweet onions
green pepper
hot red pepper
parsley (cilantro is *really* expensive here..)
avacados (really good on these tortillas)

Optional
craisins
raisins
peanuts
 

Directions:

Put the Tortilla on a microwavable dish. Sprinkle the blue & feta cheeze (more feta than blue) and the black beans on the top. Microwave the tortilla for 30 seconds to make the cheese melt (It may be longer or shorter depending on your Microwave's power) Don't overdo it, you don't want the cheese to get runny.

Dice and add a bit of the tomato, sweet onions, green pepper, hot red pepper, parsley, and avacado. You top with the optional craisins, raisins, and / or peanuts if you wish, but leaving them off will not ruin it.

Serving with your favorite Salsa is optional, but it is quite tasty without.
