Herbal Feta Cheese

Feta is a marvelously tangy Greek cheese. This recipe is perfect for hors d'oeuvres and is fast and easy to prepare. Just right for the hostess who is pressed for time!

Ingredients:

One 8 oz. (or larger) block of Feta cheese

Fresh or dried herbs (basil, oregano, thyme, lovage, dill, etc.)

Olive Oil

Diced tomatoes

Crackers, bagel pieces, or small pieces of crusty bread.

Remove the Feta cheese from its package and place it on a microwave safe plate. Cover the top of the cheese with herbs. Pour some olive oil onto the herbs to moisten them. Microwave on HIGH for 90 seconds. Remove the cheese, spoon diced tomatoes on top of the herbs, and microwave for an additional 30 seconds.

Serve this cheese with crackers, small pieces of crusty bread, or bagel pieces.
