Creatures listed above are the ones that are easier to find, alternatives are not listed. Note: You can never learn skills from the creatures in the Battle Square in Gold Saucer. But you can morph the creatures or steal from them.
A tip on getting Chocobuckle: Go to the Chocobo farm to get some Mimett Greens, then look for Chocobos in the Mideel Area. Remember to feed the Chocobo at least three times in battle. Do a L4 Suicide on the enemies (preferably while it is still eating). The Chocobo should counter with Chocobuckle.
Another tip: You can learn skills with multiple Enemy-Skills Materia equipped. To be clear, I will state an example: If Cloud has three E-Skill Materia equipped and gets hit by Shadow Flare, all E-Skills Materia will have that skill. However, if one of the Materia already has Shadow Flare, the skill will not be acquired by any of the others.
