Grecian Tomatoes
Description: I really quick salad/side dish. I let mine marinate in the fridge for an hour or so to really absorb and blend the flavours.
Ingredients:
- 4 medium tomatoes, cut into 1/4 inch slices
- 1 small red onion, thinly sliced and separated into rings
- 3/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, minced
- 1/2 teaspoon salt
- 1/2 teaspoon fresh coarse ground black pepper
- 1 tablespoon olive oil
Steps:
- Arrange tomato and onion slices on a plate.
- Sprinkle with the feta cheese, parsley, salt and pepper.
- Drizzle with oil.
- Cover and refrigerate for 15 minutes.
